Welcome the cozy vibes of fall with a homemade Pumpkin Spice Latte that not only warms your heart but also keeps your health in check. Ditch the coffee shop lines this season and treat yourself to a deliciously warm cup of seasonal cheer right from your kitchen. This recipe uses wholesome ingredients like unsweetened cashew milk and natural sweeteners, blended with the quintessential fall flavors of pumpkin spice and vanilla.

This latte is perfect for those looking to enjoy the festive flavors without the overload of sugar and calories typically found in coffee shop versions. For instance, a Grande (16 oz) Pumpkin Spice Latte at Starbucks packs 390 calories and a whopping 52 grams of carbohydrates. My homemade version dramatically cuts that down to just 100 calories and 14 grams of carbohydrates per 18 oz serving. 



Ingredients:

  • 2 cups unsweetened cashew milk (16 ounces)

  • 1 tbsp maple syrup

  • 2 tsp Truvia sweetener

  • 1/4 tsp vanilla extract

  • 1/4 tsp pumpkin spice

  • Pinch of salt

  • 2 shots espresso (2 ounces)


Instructions:

  1. Blend Ingredients: In a blender, combine the unsweetened cashew milk, maple syrup, Truvia sweetener, vanilla extract, pumpkin spice, and a pinch of salt. Blend until smooth and well-mixed.

  2. Heat Mixture: Pour the blended mixture into a microwave-safe container. Heat in the microwave for 2 minutes, or until hot. Be sure to watch it to prevent overflowing.

  3. Prepare Espresso: While the milk mixture is heating, prepare two shots of espresso. Pour the espresso into a large mug.

  4. Combine: After heating, carefully remove the milk mixture from the microwave and stir well. Pour the hot spiced milk over the espresso in the mug.

  5. Serve: Gently stir the latte to incorporate the espresso with the milk. Optionally, you can top it with a sprinkle of pumpkin spice.

  6. Enjoy: Your delicious, homemade Pumpkin Spice Latte is ready to enjoy!
